Convection ovens use a fan for hot air to circulate throughout the baking compartment, allowing foods to cook more quickly than in a conventional oven. When cooking ham in a convection oven, you usually need to reduce the recommended cooking temperature to 250 degrees Fahrenheit (121 degrees Celsius) and cooking time to 25%. However, you always have to check your internal temperature with a meat thermometer before consuming it.



Cooked smoked ham

Smoked ham cooked, usually, is consumed cold as long as it is properly packaged in a federal inspection plant. If served hot, this type of ham should be heated to an internal temperature of 140 degrees Fahrenheit (60 degrees Celsius). Hams that do not come from a federal inspection plant should be heated to an internal temperature of 165 degrees Fahrenheit (74 degrees Celsius), which means that you may need to mount a few more minutes of the recommended cooking time. Pre heats your convection oven to 300 degrees Fahrenheit (148 degrees Celsius). Hams with bone should be heated for 11 to 13 minutes per pound (0.4 kilograms). Half hams with bone require 13 to 18 minutes per pound. Boneless ham should be heated for 11 to 15 minutes per pound. Vacuum-packed boned hams require seven to 10 minutes per pound. Whole hams and half hams cut into spiral need seven to 13 minutes per pound. A boneless arm requires 19 to 22 minutes per pound.

Uncooked smoked ham

The US Department of Agriculture recommends heating smoked uncooked hams at an internal temperature of 160 degrees Fahrenheit (71 degrees Celsius). These hams will take a bit longer to heat in a 300-degree oven (148 degrees Celsius) than a smoked ham. A smoked ham with bone requires approximately 13 to 15 minutes per pound (0.4 kilograms) to reach its point. Half a ham with bone should be cooked for 16 to 19 minutes per pound. A bone leg or butt should be cooked for 26 to 30 minutes per pound, while a boneless arm requires 22 to 26 minutes per pound. A boneless shoulder should be cooked for 26 to 30 minutes per pound.

Uncooked fresh ham

Uncooked fresh ham should also be heated to an internal temperature of 160 degrees Fahrenheit (71 degrees Celsius) before serving. In a 300-degree oven (148 degrees Celsius), a fresh leg of boneless ham should be cooked for 16 to 19 minutes per pound (0.4 kilograms). A complete fresh boneless leg requires 18 to 21 minutes per pound, while a half-fresh ham with bone should be cooked for 26 to 30 minutes per pound.

Considerations
Be sure to check the internal temperature of the hams before serving them, particularly those that are uncooked. Convection ovens are designed to brown foods faster, therefore, watch over the ham while cooking. If the outside of the meat seems to brown too fast, put a piece of paper on the ham to prevent it from burning. The blade can increase the baking time.
