Today I will be making peanut butter chocolate chip pancake.
We'll be need:
some all-purpose flour, baking powder, salt and cinnamon, peanut butter, mini chocolate chips, canola oil and maple syrup, soy milk, and some cooking spray.
First, we going to start with dry ingredients
some all-purpose flour, baking powder, salt and cinnamon, peanut butter, mini chocolate chips, canola oil and maple syrup, soy milk, and some cooking spray.
First, we going to start with dry ingredients
- 1 cup all purpose flour
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 3/4 cup to 1 cup chocolate chips (depending on preference)
- powdered sugar - for finishing
Get those mixed up, flour, salt, cinnamon, and baking powder just give that gentle mix until it looks like it's pretty much incorporated, then we're going to set that aside, and move on to the wet ingredients
Wet Ingredients:
- 3 tablespoons peanut butter
- 2 tablespoons canola oil
- 3 tablespoons maple syrup
- 1 cup nondairy milk (soy, almond, or rice)
- cooking spray
So we are going to take the maple syrup and the oil combine that with the peanut butter, and doesn't work it until it's nice and smooth milk. And now we are ready to combine chocolate chips going last.
So create a well in the center by moving the dry ingredients out of the way and gently add all of the peanut butter mixture, it doesn't have to be perfectly smooth, but you want to make sure there are no dry lumps.
Time For the chocolate chips; just going to add these in, shake them around and using a spatula gently, fold them into the batter which is so light and fluffy already, allright, this deliciousness is ready.. I am going to use a ladle.. This smell so enticing, that if you're making these in the weekend morning I wouldn't be surprised if people that were trying to sleep in, ended up walking to the kitchen and stuffing their face with these because soon as these start to form little bubbles on the top it's about five minutes each side, you know that they are ready to flip. So you want to go around the edges gently loosen up that pancake and then once you can get your spatula underneath; moment of truth..one, two,, three ..Yess!!

Look at that..
Here we are..
Moment of truth, this smells so good I am really doubting my ability to be patient right now, but you know you are gonna do something do it right what's that you say don't powdered sugar, mind if I do .. Now we have our choice of syrup, if you'd like to go the traditional route of course there's always maple syrup which is fine and dandy on any pancake or if you're ready to kick it up a notch chocolate syrup and of course that's what I am going to go with.
