Cornish Game Hens Recipes





1/2 cup fresh orange juice
1/4 cup fresh lemon juice
1/2 tsp. prepared mustard
1/4 tsp. paprika
3 tbsp. butter
4 Cornish game hens
Salt and pepper
2 thin orange slices, halved
2 thin lemon slices, halved
1 cup seedless grapes




1. Combine orange juice, lemon juice, mustard and paprika; add butter. Bring to a boil; simmer 1 minute.

2. remove giblets from hens; rinse in cold water; dry well. Season each cavity with salt and pepper. Add a half slice orange and lemon and 8 grapes to each hen. Truss legs; arrange in shallow pan.

3. Baste with orange juice mixture and cover loosely with foil. roast at 375 degrees for 30 minutes, basting occasionally.

4. To make sauce, remove excess fat from pan; add remaining basting mixture. Bring to boil; simmer until thickened. Spoon over hens.
