Best Gingerbread Pancakes Recipe

These pancakes are in fact a more delicious version of the classic plain pancakes. The recipe is full of flavors because of the spices packed inside: ginger, cinnamon, clove, nutmeg. They are great for any day of the year but are best to eat as Christmas breakfast, of course.

Gingerbread Pancakes

Dry ingredients:

2 cups all-purpose flour
1-2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 1/2 teaspoons ground ginger
1/4 teaspoons ground nutmeg
1 1/2 teaspoons ground cinnamon
1/4 teaspoons ground cloves
Wet ingredients:

2 eggs
1 1/2 cups water
1/2 cup molasses
3 tablespoon melted butter
Directions:

In a mixing bowl whisk together the dry ingredients: flour, baking soda, baking powder, salt, plus the spices: ginger, cinnamon, nutmeg and cloves. Make a well in the center of dry mixture.

In a separate bowl mix the water, egg, molasses, and butter. Pour the wet mixture into the dry mixture well and mix just until combined. Be careful not to over-mix, the batter should be a little lumpy and runnier than the usual pancake batter.

Butter the skillet and immediately pour batter onto it. Pour about 1/4 cup for one pancake. Cook until brown and bubbles appear on surface, then flip and cook the other side.  Serve warm with maple syrup.
