Nutty Broccoli Appetizers




Yield: 24 Balls

Ingredients

1 tbs extra virgin olive oil
1/4 c finely chopped onions
4 garlic cloves, mashed
10 oz frozen chopped broccoli
1 c bread crumbs, whole wheat
1/4 c grated parmesan cheese
1/4 c chopped walnuts
1/2 ts dried oregano
1/2 ts dried basil
1 salt and pepper to taste
1/2 c egg substitute (equivalent
-to 2 egg; s
1 optional: low sodium soy or
-teriyaki; sauce for a dip)

--------------------------PREPERATION---------------------------------

Instructions

Saute onions and garlic in olive oil. Cook broccoli according to
package directions; squeeze out excess water. Cool slightly.

Combine with remaining ingredients. Form into balls 1 1/2 inch in
diameter. Place on non-stick pan. Spray balls with olive oil or
canola spray. bake in preheated 40-degree oven 20-30 minutes, or
until brown. Serve warm or at room temperature.

Note: You can also sprad in a shallow pan, bake and cut into squares.
